Recipe 1: Blueberry Muffins

Over the past few weeks every time I go into Sainsbury’s I pause by the muffins in the bakery, they look so good. I want one. Not an entire 4-pack, just one, but I never buy them because they’re always a bit too sweet for me.

Last night I decided that for my first bake of the Mary and Me Undertaking I would have a redo of her Blueberry Muffins. In all honesty, I had baked these the night before using some blueberries I had frozen the previous week and substituting my own mixture of self-raising flour because I didn’t have any premixed self-raising flour. The blueberries must not have defrosted enough because the muffins came out a bit chewy.

So on the way home I stopped at Tesco, grabbed a fresh punnet of blueberries and a bag of self-raising flour.

After dinner, I whipped up the batter and popped the muffins in the oven. Anxious to see how they turned out I barely waited 5 minutes once they were out the oven to try one. It crumbled in my hands, but it was delicious. I just couldn’t bring myself to eat another muffin at 11 pm after they had cooled sufficiently, I’m really worried that my waistline might double in size by the end of this project… So I waited and had one for breakfast this morning, and it was perfect. Not chewy at all.

I was surprised that the recipe called for grated lemon rind, it definitely came through in the muffins giving them a lovely fresh taste and balancing nicely with the blueberries.

The verdict

These were so quick and easy to whip up, they only bake for 25 minutes so you could easily make them fresh for breakfast in the morning. The muffins themselves are full of flavour and are not too sweet at all, they only take 75g of sugar for the batch of 12.

Will I make it again? And what will I do differently next time?

I’ll definitely be making these again, they are sooo good! Next time I will make the batter 1.5 times so I can have those big Bakery style muffins. And maybe I’ll go half blueberry half raspberry. ‘Cause I’m wild like that.
